Homemade Cornbread

As promised, here is the recipe for delicious homemade cornbread using THRIVE foods from Shelf Reliance. This recipe will make about 12 servings, and will take you only about 15 minutes to prepare, and about 30 minutes to cook depending on your oven. (I have an electric oven, so my cornbread took about 45 minutes to bake.)
The ingredients you will need are as follows:

  • 1/2 cup butter, melted 
  • 1 cup THRIVE white sugar 
  • 2 THRIVE whole eggs, rehydrated (2 tbsp powder + 4 tbsp water) OR 2 fresh eggs 
  • 1 cup buttermilk OR 3 tbsp THRIVE powdered milk + 1 cup water + 1 tbsp vinegar or lemon juice 
  • 1/2 tsp THRIVE baking soda 
  • 1 cup THRIVE cornmeal 
  • 1 cup THRIVE white flour 
  • 1/2 tsp THRIVE iodized salt  

Mixing and baking instructions are as follows:

  1. Preheat oven to 325 degrees 
  2. In a mixing bowl, whisk together melted butter and sugar.  Add prepared eggs/fresh eggs and prepared buttermilk/fresh buttermilk and continue to whisk.  

       3. Combine dry ingredients in a separate bowl, mixing thoroughly; add to the wet ingredients. Stir until       combined, but do not over-mix. 






        4. Pour batter into a greased muffin pan or 8 x 8 inch baking dish.  Bake for 20-30 minutes, or until inserted toothpick comes out clean.
